蒜茸韭菜/Chinese Chive Salad in Garlic Dressing

This dish is very similar to Okra Salad in Garlic Dressing.  When I was in Asia I once had this dish at a Taiwanese restaurant.  It was super delicious!  I always wanted to try making this dish at home so I know there is no MSG added.  Finally I found the recipe on a Chinese website today and I made it for dinner.  I changed a few ingredients to fresh herbs and it tasted even more delicious with natural ingredients.


Ingredients:

·     10 oz chives
·     1 tsp olive oil
·      ½ tsp salt

Dressing:

·     2 tbsp chopped garlic
·     1 tsp chopped green onion
·     1 tsp cilantro
·     1 tsp chopped fresh red chili pepper
·     2 tbsp soy sauce
·      ½ tsp sugar
·     I tsp sesame oil
·     1 tbsp fresh water

Directions:

1.     Bring half a medium pot of water to a boil.  Add oil and salt to the water - this will help to keep the chives green.
2.     Dip the chives into the boiling water for 30 seconds.  Make sure all the chives are soft and tender.  Transfer chives to a plate, let cool.
3.     Line up the chives and cut them approximately 2.5 inch long.  Transfer to a serving plate.
4.     Mix all the ingredients for the dressing and pour on top of the chives.  Now enjoy your delicious Chinese chive salad.
