青紅蘿卜湯/Pork Rib with Green Radish and Carrot Soup

Pork Rib with Green Radish and Carrot Soup is a great soup to have all year round.  It warms you up when its cold an helps to calm your body down when its hot.  It’s a perfect soup for children because the dried dates and carrot add a hint of sweetness which brings out the fragrances and flavors of the pork ribs.  Well cooked carrots are the perfect finger food for your baby (To avoid choking, do not give your baby any ribs or bones).


According to traditional Chinese herbal medicine, this soup helps to prevent anemia and release stress so it’s great for adults too.  And did I mention it is delicious!  This soup requires 3 – 4 hours of slow cooking, but it’s very easy to make.


Ingredients:

·      1 lb fresh chopped pork rib
·      6 oz carrots
·      6 oz green radish
·      4 honey dates
·      1 oz sliced ginger
·      2.5 liters water (about half of a large soup pot)
·      1½ tsp salt

Directions:

In a large soup pot, add pork rib, green radish, carrots, ginger, honey dates and water. Bring to a boil.  Reduce the heat, use a soup strainer to strain all the dark bubbles on top of the water.  Reduce the heat to the lowest and cook for 3 – 4 hours, add salt.   Now you are finished!


Same as other slow cooked Chinese soup, this soup can be stored at room temperature for up to 3 days.  Make sure to boil it for a few minutes before eating.
