牛尾湯/Oxtail and Tomato Soup



This is not just a soup, this is a dish as well.  This Oxtail and tomato soup is my husband’s favourite.  My husband grew up in the west, he never had this soup or Oxtail before he met me.  He told me that a lot of people don’t know that you can eat Oxtail.  Yes, you can.  When you cook it right, it's so delicious!

This Oxtail and Tomato Soup is very nutritious.  Oxtail is said to help in treating kidney illness and "masculine issues".  Oxtail also contains a lot of collagen, which is good for your skin.  Tomato contains lycopene and is one of the most powerful natural antioxidants.  This Oxtail and Tomato Soup is a very well known beauty food in China. 


Ingredients:

·      1 lb fresh chopped Oxtail
·      1 lb tomato
·      6 oz carrots
·      1 oz sliced ginger
·      1 can of tomato sauce (optional)
·      2.5 liters water (about half of a large soup pot)
·      1½ tsp salt

Dipping sauce:

·      1½ tbsp garlic chili sauce
·      1 tsp sesame oil


Directions:

In a large soup pot, add oxtail, tomato, carrots, ginger and water. Bring to a boil, and then add the tomato sauce.  Reduce the heat, use a soup strainer to strain all the dark bubbles on top of the water.  Reduce the heat to the lowest and cook for 3 hours, add salt.   Now you are finished!

Lastly, mix the ingredients for the dipping sauce and then use it to dip the ox tail.  You will be surprised how tasty this is.  You will want to make it again.
