豆乾擔擔面/Dried Tofu Dan dan Noodles

I mentioned previously how to make Sautéed Chives with Dried Tofu which you can find the recipe on my Recipes page.  Now you can simply use the Sautéed Chives with Dried Tofu as a base to make Dried Tofu Dandan Noodles.  Wait, it’s not finished yet…  There are still lots of ingredients to add to make this meal delicious.  Follow me:

Ingredients:

·      5 oz noodles (dry or fresh noodles)
·      1 cup Sautéed Chives with Dried Tofu

For the sauce base:

·      1 tbsp low- sodium soy sauce
·      1 tsp vinegar
·      1 tsp sesame oil
·      1 tbsp chopped green onion
·      ½ tsp roasted sesame seed
·      1 tsp sesame paste (optional)
·      1 tsp ground peanut paste (optional)
·      1 tsp chili oil (optional, but I love it!)

Directions:

Prepare your sauce base before cooking the noodles.  Add your tofu and all sauce ingredients above to a serving bowl.  Make sure it’s evenly mixed.

In a medium pot, boil 6 cups of water.  Add noodles to boiling water and cook for 4 – 5 minutes or until noodles are tender.  Transfer the noodles to the bowl and add half-cup water from the pot.  Mix evenly with sauce and Sautéed Chives with Dried Tofu.   Now you are done!!  These delicious Dried Tofu Dandan Noodles can be made in only 10 minutes!!
