黃豆燒排骨/Braised Pork Rib with Soy Beans


This dish requires 1 - 2 hours of slow cooking, I usually let it simmer for 2 hours.  However it's up to your personal taste - the longer you simmer the tender ribs and soy beans will get.  Once it's done you will be so surprised how delicious it is and you will want to make it again!

Ingredients:

·      1½ tbsp olive oil
·      5 - 6 pcs star anise
·      1 tsp dried cumin
·      1 pc dried cinnamon
·      ½ tsp dried clove
·      A few bay leaves
·      ½ tsp caraway seeds
·      2 tbsp Asian thick broad bean sauce
·      Soy sauce as taste
·      6 pcs crystal sugar
·      4 green onion
·      ½ cup garlic
·      2 oz ginger slices
·      1 lb fresh chopped pork ribs
·      2 cups of soybeans
·      4 cups water



Directions:

Soak the soybeans at least 20 minutes before cooking.  I usually soak them around lunchtime, and then they will be ready to cook for dinner.

In a large non-stick saucepan, heat oil over medium heat.  Add all ingredients except chopped pork ribs, soybeans and water, stirring for about 3 – 4 minutes.  Add chopped pork ribs and cook, stirring, until golden, about 7 minutes.  Add water and soybeans; bring to a boil.  Cover, reduce heat and simmer until the ribs and soybeans are very tender.  The simmering process can take anywhere from half an hour to 2 hours depending on how tender you want the soybeans to be.  You don’t need to watch the pot while it’s simmering as long as you use a non-stick saucepan.

I love this dish.  I always make a little bit extra.  The next day, I simply use the leftovers as a base to make delicious braised pork noodles.  If you are interested in the recipe for braised pork noodles, please leave a comment here, I will post the recipe.
