鴛鴦火鍋/Spicy and Light Double Soup Based Hotpot

Hot pot is my favourite food. I eat hotpot all season long.  I was born in Chongqing China, which is the most famous city for hotpot.  Hotpot refers to several East Asian varieties of stew, consisting of a simmering metal pot of stock at the center of the dining table. While the hotpot is kept simmering, ingredients are placed into the pot and are cooked at the table. Typical hot pot dishes include thinly sliced meat, leafy vegetables, mushrooms, wontons, egg dumplings, and seafood. The cooked food is usually eaten with a dipping sauce. In many areas, hot pot meals are often eaten in the winter.

Having hotpot at home, the most important things are the soup base and the dipping sauce.  Once you have these two, all you need to do is start cooking at the table!


Spicy Soup Base Soup Ingredients:

·      4 oz Spicy hotpot soup base (4oz spicy hotpot sauce can be used for 1 liter water.  You can buy a spicy hotpot soup base from any Chinese supermarket.  I’m using a Chongqing spicy hotpot soup base. )
·      2 oz Green onion
·      2 oz leek
·      2 oz garlic
·      1 oz sliced ginger
·      1 liter water (fill up 3-quarter of the pan)

Light Soup Based Soup Ingredients:

If you have Chinese soup already been cooked at home, you can use the soup, otherwise you can use water.

·      2 oz Green onion
·      2 oz leek
·      2 oz garlic
·      1 oz sliced ginger
·      1 tsp white pepper powder
·      1 tsp salt
·      1 tsp olive oil
·      2 oz mushroom
·      2 oz soft tofu
·      1 liter water or homemade soup (fill up 3-quarter of the pan)


Dipping Sauce:

·      1 tbsp low- sodium soy sauce
·      1 tsp vinegar (optional)
·      1 tsp sesame oil
·      1 tbsp chopped green onion
·      1 tbsp chopped garlic
·      1 tsp cilantro
·      ½ tsp roasted sesame seed
·      1 tsp sesame paste (optional)
·      1 tsp Shacha sauce 
·      1 tsp Fermented bean curd
·      1 tsp sesame seasoning vinegar

Now you can start cooking whatever you like.  Enjoy your hotpot!

  3. Omgsh I love hotpot as well. When there's no one to eat hotpot with me, I go eat mala tang by myself. It's a bowl of mixed veggies and whatever protein you choose whether it be fish, shrimp, beef, etc in a hot, spicy soup base. I stumbled upon your blog from a youtube video and your recipes are amazing especially since I love spicy food and you have so many recipes for spicy foods. There are so many that I want to and will try. I'll let you know how they come out.
