干絲炒牛肉/Shredded Beef with Dried Tofu Stir-fry

I made beef two days ago but it didn’t really fulfill my cravings.  I felt like beef again.  My husband said that he wanted to have tofu so I decided to combine the two to make a meal.  This Shredded Beef with Dried Tofu Stir-fry is a common traditional Chinese dish but I have changed a few of the ingredients based on what I have in my fridge.  I believe the most creative way to cook is to always play around with new ingredients and cooking styles and you will be surprised by what you create.  The idea is to use what's available in new and creative combinations.  I added the Chinese chives into this dish to bring a fresh flavor and hint of color which goes nicely with the red chili, tofu and beef. 




Ingredients:

·      3 oz Chinese chives
·      6 oz shredded beef
·      4 oz dried tofu
·      1 oz sliced ginger
·      2 green onion
·      ½ tsp salt
·      ½ tsp sugar
·      2 chopped fresh red chili peppers
·      2 tbsp grape seed oil

To marinate the beef:

·      1 tsp cornstarch
·      1 tsp soy sauce
·      1 tsp cooking wine
·      1 egg white

Directions:

1.    Marinate the beef 10 minutes before cooking.  Heat up 1 tbsp grape oil in a nonstick medium saucepan or a wok.  Add beef to cook for a minute or two until the beef is 80% ready. Transfer to a plate.
2.    Julienne the dried tofu.  Cut the chives and green onion approximately 2.5 inches long.  Save a small portion of the green onion for garnishing at the end.
3.    In a nonstick medium saucepan or a wok, heat 1 tbsp grape seed oil over medium-high heat.  Add ginger, red chili and green onion to cook.  Stir for about 10 seconds, and then add tofu and chives.  After about 2 minutes, when the tofu turns golden, add the cooked beef, salt and sugar.  Mix everything evenly.  Transfer to a serving plate and garnish with chopped green onion.  I served this meal with brown rice to try something different and it only took about 20 minutes from start to finish.  Enjoy.
