沙茶羊肉炒面/Lamb Fried Noodles in Shacha Sauce

If you are a meat lover you will love this meal.  Usually I'm not a big fan of lamb but I make an exception for this dish.  Lamb always goes well with Shacha sauce because Shacha Sauce is made from seafood such as brill fish and dried shrimp so the seafood flavour balances perfectly with lamb.  My husband loves lamb and fried noodles so when I cook this meal he gets double rewarded.  This is a nice winter meal because lamb usually makes your body feel warm.  According to Chinese traditional medicine, lamb can help recover from kidney illness, losing blood, and the cold.  It is especially recommended for women who just gave birth.

(Make 2+ servings)

  • 8 oz fresh noodles
  • 3 tbsp olive oil
  • 4 oz sliced lamb
  • 2 oz onion
  • 2 oz carrot
  • 2 green onion
  • 3 oz spinach
  • 1 tbsp Shacha sauce
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1 tbsp cooking wine
  • Half tbsp white pepper powder
  • Half cup water

To marinate the lamb:

  • 1 tsp sesame oil
  • 1 tsp soy sauce
  • Half tsp cooking wine
  • 1 tbsp corn starch water


  1. Marinate the lamb.  Julienne the carrot and onion.  Cut the green onion approximately an inch and half long.
  2. In a medium pot, add noodles to the boiling water, and cook for 1 minute.  Transfer to a colander, rinse with cold water and drain the water.  Add 1½ olive oil to the noodles, and then mix evenly.  Let cool.
  3. In a nonstick medium saucepan or a wok, heat 1½ tbsp olive oil over medium-high heat.  Add green onion, onion and carrot to cook.  Stir everything for about 2 minutes, until you can smell the fragrance of onion.  Add noodles, lamb, Shacha sauce, soy sauce, sugar, cooking wine and white pepper powder.  Stir everything evenly.  After about one minute, add water and cover the wok.  About 1 - 2 minutes, until all the water is gone.  Add spinach.  Keep stirring for 2 minutes, until the spinach is tender and ready.  Transfer to a serving plate.  Now you are done.  Enjoy your Lamb Fried Noodles in Shacha Sauce and stay warm.
