清炒雪豆/Sautéed Snow Pea with Ginger and Garlic

This is my daughter's favourite.  Whenever she sees me cooking this dish, she starts following me everywhere saying "high chair, high chair" and signalling for me to pick her up and set up her high chair for dinner.  It is amazing how she has learned that "high chair" means its time to join us and sample adult food.  Her favorite part is opening the pea pod and taking out each little pea and eating them.  This dish takes about 7 minutes to make.  I like this dish because it has a crisp texture and light and fresh taste.


Ingredients:
  • 12 oz snow peas
  • 1 tsp chopped ginger
  • 1 tsp garlic
  • 1 tbsp olive oil
  • half tsp salt
  • 2 tbsp water (or homemade soup)
Directions:

In a nonstick medium saucepan or a wok, heat oil over medium-high heat.  Add chopped ginger and garlic.  Stir for about 1 minute, add snow peas.   Stir fry for about 2 - 3 minutes, add water and salt.  Keep stirring for about 4 - 5 minutes until most of the water is gone.  Transfer to a plate.  Now you are done.
